Our staff will arrive and set up our custom made BBQ cooking over coals and ladening a table filled with your choice of two sides and two proteins coupled with Organic sourdough and churned rolled butter. Our staff will replenish the table as needed and when finished will vanish any sign that they were ever there. Leaving you with conversation and full bellies.
- Marinated preserved lemon Chichen legs w/ confit garlic and chermoula
- Smoked Pork Shoulder w/ Lexington BBQ Sauce
- House coffee rubbed 12 hr Beef Brisket w/ Russian Mayo
- Marinated flank steak sliced and served medium – rare over a green vichyssoise
- Confit twice coal roasted Pumpkin, puffed grains, fried shallots and hazelnuts ( Not a protein but a main)
- Grilled corn in the husk served w/ chipotle butter and lime
- House slaw w/ coriander and house aioli
- Roast potato salad w/ mascarpone, garlic chives and crispy pancetta
- Grain salad of Faro, smoked almonds, cauliflower and Moroccan yoghurt
- Organic greens from our Kitchen garden w/ watercress and house EVO
- House cured Applewood Gin and beetroot cured Salmon w/ buttermilk dressing and soft herbs and coriander seeds.
- Grilled Mooloolaba prawns served w/ pico de galo and black garlic aioli.
- Asian Snapper grilled in Banana leaf
- Black squid chuleta grilled over coals w/ chilli and peas
